Orzo Arugula Salad

This dish is refreshing and delicious. Bonus: it is SO easy! You do have to make ahead of time because it needs to sit overnight. The flavors all come together though and it is so worth the wait.

Ingredients:

1 bag arugula

1 container basil

1 container crumbled feta cheese

1 cup orzo pasta

1 bag dried cranberries (or dried cherries)

1 bag pine nuts

2 lemons, juiced

1/2 cup olive oil

Salt and pepper

Instructions:

  1. Boil orzo pasta. Let cool.

  2. Mix with 1/2 cup olive oil, salt and pepper to taste.

  3. In a large bowl, mix arugula, basil, feta, cranberries, pine nuts. Then add orzo pasta and lemon juice. If needed, add more oil.

  4. Let sit overnight or for 1/2 a day

  5. Before serving, add a little more lemon, salt and pepper, and mix well.
